Florentines
Ingredients :
- 2 oz butter
- 4 tbsp caster sugar
- 3 tbsp flour
- 1 ¾ oz almonds, chopped
- 1 ¾ oz mixed peel, chopped
- 1 oz raisins, chopped
- 1 oz glace cherries, chopped
- To coat: 4 oz dark chocolate, melted
- To coat 2 oz white chocolate, melted
Method :
- Heat butter and sugar till melted. Remove from heat and add in flour, peel, raisins, cherries, almonds and place a teaspoonful of mixture well apart on a tray. Flatten slightly with a fork. Bake at 180°C for 10 minutes. Cool till firm on the tray and then transfer to a rack. Spread melted chocolate on the smooth side of the Florentines. Let set. As the chocolate sets, mark wavy lines with a fork and chill.(Half of the Florentines can be coated in white chocolate for a variation).Makes 10.
