Rainbow rice


Ingredients
  • 2 cups rice, boiled
  • 1 cup rice, boiled and coloured yellow
  • 1 cup rice, boiled and coloured red
  • 1 cup thick mint and coriander chutney, tinted green
  • 2 cups cooked spicy qeema
Qeema :
  • 1 tbsp oil
  • ½ kg mutton mince
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 tsp ginger garlic
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 3 green chillies, chopped
  • 2 tbsp coriander, chopped
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp vinegar
Method
  • Cook mutton mince in little oil, onion, ginger garlic, tomatoes, red chilli powder, turmeric, green chillies, salt, coriander leaves, lastly add sugar and vinegar. There should be no gravy left. In a large ring mould or cake mould put a layer of white rice, then a layer of spicy qeema, then a layer of yellow rice, some green chutney, some white rice press down firmly in tin, tint the rice yellow and red, put foil over the tin and keep warm in an oven till serving time. Before serving overturn the tin on a large platter. Serve with raita.
