Baba Ghanouj


Ingredients 
  • 1 1/2 kg brinjals
  • ½ cup tahini
  • Juice of 1 lemon
  • 1 clove of garlic, minced
  • Salt to taste
Method
  • Grill brinjals on an open flame or in the oven till skin is char grilled. Remove and place on a plate and let them cool completely. Drain juices, remove skin and place the aubergine pulp in a food processor. Add the garlic, lemon juice, salt, and tahini and pulse for about a minute or till soft and smooth. Season with more lemon juice and salt according to your taste. Transfer to bowl, garnish with mint and olive oil. Serve with warm pita bread.
