Chicken Satay and Satay Sauce
Chicken Satay
Ingredients
- Peanuts, roasted 2 oz
- Breadcrumbs 2 oz
- Chicken breast (strips) 4
- Flour 3 oz
- Eggs 2
- Lemon 1
- Oil for frying

Satay Sauce
Ingredients
- Blend peanuts with breadcrumbs in a food processor, take out on a plate.Sprinkle flour onto a separate plate. Coat chicken strips in flour, dip in egg and roll in peanut crumbs. Fry in hot oil till golden. Drain on absorbent paper. Serve with satay sauce.

- Oil 1 tbsp
- Onion, chopped 1
- Red chili, chopped 1
- Garlic, crushed 2 cloves
- Ginger, chopped 2 inches piece
- Coconut milk 3 oz
- Lemon 1
- Soya sauce 1 tbsp
- Roasted salted peanuts 5 oz
Method
- In oil add onion, chili, garlic, ginger and sauté till soft, add the coconut milk, keep stirring, add lemon juice, soya sauce and simmer, add peanuts and blend in a blender till chunky. Check and add more soya sauce and lemon juice if needed.
