Chicken Satay and Satay Sauce

Chicken Satay


Ingredients
  • Peanuts, roasted 2 oz
  • Breadcrumbs 2 oz
  • Chicken breast (strips) 4
  • Flour 3 oz
  • Eggs 2
  • Lemon 1
  • Oil for frying
Method
  • Blend peanuts with breadcrumbs in a food processor, take out on a plate.Sprinkle flour onto a separate plate. Coat chicken strips in flour, dip in egg and roll in peanut crumbs. Fry in hot oil till golden. Drain on absorbent paper. Serve with satay sauce.

Satay Sauce


Ingredients

  • Oil 1 tbsp
  • Onion, chopped 1
  • Red chili, chopped 1
  • Garlic, crushed 2 cloves
  • Ginger, chopped 2 inches piece
  • Coconut milk 3 oz
  • Lemon 1
  • Soya sauce 1 tbsp
  • Roasted salted peanuts 5 oz

Method
  • In oil add onion, chili, garlic, ginger and sauté till soft, add the coconut milk, keep stirring, add lemon juice, soya sauce and simmer, add peanuts and blend in a blender till chunky. Check and add more soya sauce and lemon juice if needed.
