Chocolate Dipped Ginger Snaps


Ingredients :
  • 50gm butter
  • ¼ cup brown sugar
  • 2 tbsp golden syrup
  • ¼ cup flour
  • 2 tsp ginger powder
  • 100 gm chocolate melted, to dip
Method:
  • Combine butter, sugar, syrup over low heat and cook till sugar has dissolved. Remove from heat and add flour and ginger powder. Drop teaspoons of the mixture onto baking trays, two at a time, allowing plenty of room to spread. Bake only 5 minutes on 180c. Leave 30 seconds on tray. Carefully lift off the tray whilst still warm and roll around the handle of a wooden spoon into a cylinder shape. When cool and crisp, gently slide off the spoon. Cool completely and then chill. Dip each end of the gingersnaps into the melted chocolate, drain off excess chocolate and let set on a sheet of greaseproof paper.
