Palak pakora chaat


Ingredients
  • Spinach leaves 16-20
  • Gram flour 1 1/2 cups
  • Salt to taste
  • Red chilli powder 1/2 tsp
  • Turmeric powder 1/4 tsp
  • Carom seeds 1/2 tsp
  • Oil to deep fry
  • Yogurt 1 cup
  • Roasted cumin powder 2 tsp
  • Green chutney 4 tbsp
  • Sweet date and tamarind chutney 4 tbsp
  • Onions,chopped 3 medium
  • Sev 1/2 cup
  • Fresh coriander leaves,chopped 1/2 cup
Method
  • In a bowl mix gram flour, salt, red chilli powder, turmeric powder, carom seeds and add sufficient water to make a thin batter. Heat sufficient oil in a wok. Coat each spinach leaf with batter on both sides and deep fry in hot oil till golden brown and crisp. Drain and place on an absorbent paper. Whisk yogurt with salt to taste. To serve, place fried pakoras on a serving plate. Cover with whisked yogurt. Sprinkle cumin powder. Add some green chutney and sweet date and tamarind chutney. Sprinkle some chopped onions and cover liberally with sev. Garnish with coriander leaves and serve immediately.
