Chocolate Terrrine


Ingredients
  • Cream Cheese, softened 500 gm
  • Caster sugar ¼ cup
  • Coffee, dissolved in 2 tsp
  • Boiling water ¼ cup
  • Gelatin, 2 tbsp
  • Hot water ¼ cup
  • Cream, whipped 300 ml
  • Dark chocolate 150 gm
  • Milk chocolate 150 gm
  • White chocolate 150 gm
  • Drinking chocolate to garnish
Method
  • Beat the cream cheese and sugar until smooth. Fold through the coffee mixture, gelatin mixture and whipped cream. Melt the dark chocolate in a small bowl. When the chocolate is cool but flowing, fold in one third of the cream cheese mixture. Pour into a chilled and cling wrap lined 8cm x 22cm loaf pan and refrigerate until lightly set. REPEAT the method for the remaining milk and white chocolate layers. Refrigerate few hours or until set. Serve sliced and dusted with drinking chocolate.
