Chicken Pasta
Ingredients
- Boneless chicken ,cut into cubes 1 kg
- Soya sauce 3 tbsp
- Salt to taste
- Butter 3 tbsp
- Coriander, chopped 2 tbsp
- Garlic, crushed 2 tbsp
- Jalapeno, chopped 2 tbsp
- Vegetable stock ½ cup
- Lemon juice 2 tbsp
- Onion, thickly sliced 1
- Capsicum, sliced 1
- Pasta boiled 4 cups
Method
- Marinate the chicken with soya sauce and salt and refrigerate it for half an hour. Heat one tablespoon butter, add garlic and jalapenos and sauté for two minutes. Add half cup vegetable stock and lemon juice and bring to boil. Remove and grind to a smooth paste. Heat the remaining butter in another pan, add onions and sauté till light brown. Add capsicum, sauté for a minute. Add the marinated chicken and toss. Add pasta and salt and mix well. Add the sauce and let it simmer and serve.
