Vegetable Tahiri
 

Ingredients:
  • Rice 2 cups
  • Red lentils 1 cup
  • Mixed vegetables (potatoes, carrots, cauliflower, peas) 1 cup
  • Green chillies 2
  • Ghee or oil 2 tbsp
  • Bay leaves 2
  • Sugar ½ tsp
  • Mixed whole spices 1 tbsp
  • Cumin seeds 1 tsp
  • Onion chopped 1
  • Ginger garlic paste 1 tbsp
  • Red chilli powder 1 tsp
  • Coriander powder 1 tsp
  • Salt 1 tsp
  • Garam masala powder 1 tsp
  • Chopped coriander leaves
  • Lemon wedges
Method:
  • Wash and drain rice and lentils and leave soaked for few minutes. Heat oil or ghee and add bay leaves , sugar and mixed whole spices. Add cumin followed by onion, garlic ginger paste, and green chillies. When light brown add the chopped vegetables. Add rice and dal. Add in some red chili powder, coriander powder, salt and some garam masala powder. Mix and add water and cook till done. Squeeze lemon juice and sprinkle coriander leaves before serving.
