Chinese Burmese Chili Chicken
 

Ingredients:
  • Chicken boneless cubes 1/2 kg
  • Oil 1 tbsp
  • Chopped onion 1
  • Minced ginger 2 tsp
  • Minced garlic 2 tsp
  • Cubed capsicums 2
  • Thinly sliced jalapeno pepper 1
  • Zucchini 1
For the marinade:
  • Oil 1 tbsp
  • Corn flour 1 tsp
  • Salt 1/2 tsp
  • Freshly ground black pepper 1/2 tsp
For the sauce:
  • Corn flour 1/2 tsp
  • Paprika 2 tsp
  • Ground cumin 2 tsp
  • Crushed red chillies 1/2 tsp
  • Fish sauce 2 tbsp
  • Salt 1/4 tsp
Method:
  • To marinate the chicken mix together oil, corn flour, salt, and the pepper. Add the chicken and coat well with the marinade mixture. Let stand. Half the zucchini lengthwise and thinly slice each half. In a small bowl, mix the remaining 1/2 teaspoon of corn flour with 1/3 cup of cold water until the corn flour is dissolved. In another small bowl combine the paprika, cumin, and crushed red chillies. Heat a wok and add a tbsp of oil. Add the onions and stir-fry for 1 minute, add the chicken, spreading it evenly in one layer. Stir fry. Add the ginger, garlic, and paprika mixture and stir-fry for 30 seconds, till chicken is well-coated with the spices. Add the capsicums, zucchini, and chilies. Drizzle in the fish sauce and the salt for the sauce. Re-stir the corn flour mixture and pour it into the wok, stirring until everything is well-coated. Stir-fry for another minute, until the chicken is cooked through. Transfer to a plate and serve.
