Banana Brownies


Ingredients:
  • Flour ¾ cup
  • Baking soda ½ tsp
  • Salt ½ tsp
  • Unsalted butter ½ cup
  • Chopped chocolate 8 oz
  • Caster sugar ¾ cup
  • Packed light brown sugar ½ cup
  • Eggs 2
  • Vanilla essence 1 tsp
  • Ripe bananas mashed 2-3
  • Chopped walnuts 1 cup
Method:
  • In a bowl sift flour and baking soda, add salt and keep aside. Melt ¼ cup butter with the chocolate in a bowl set over a pan of simmering not boiling water and let melt. Set aside to cool for a while. Beat remaining ¼ cup butter with caster sugar and brown sugar, add eggs, vanilla essence, bananas, walnuts and the chocolate and butter mixture. Fold in the flour mixture. Pour into a greased and lined tin and bake at 180 degrees C for 30-35 minutes or until a skewer inserted in centre comes out with a few crumbs attached to it. Let tin cool on a wire rack. Once completely cool cut in squares.
