Banana Brownies
Ingredients:
- Flour ¾ cup
- Baking soda ½ tsp
- Salt ½ tsp
- Unsalted butter ½ cup
- Chopped chocolate 8 oz
- Caster sugar ¾ cup
- Packed light brown sugar ½ cup
- Eggs 2
- Vanilla essence 1 tsp
- Ripe bananas mashed 2-3
- Chopped walnuts 1 cup
Method:
- In a bowl sift flour and baking soda, add salt and keep aside. Melt ¼ cup butter with the chocolate in a bowl set over a pan of simmering not boiling water and let melt. Set aside to cool for a while. Beat remaining ¼ cup butter with caster sugar and brown sugar, add eggs, vanilla essence, bananas, walnuts and the chocolate and butter mixture. Fold in the flour mixture. Pour into a greased and lined tin and bake at 180 degrees C for 30-35 minutes or until a skewer inserted in centre comes out with a few crumbs attached to it. Let tin cool on a wire rack. Once completely cool cut in squares.
