Financiers


Ingredients:
  • Almonds 1 cup
  • Icing sugar 1-2/3 cup
  • Flour 1/2 cup
  • Egg whites (5 to 6) 3/4 cup
  • Unsalted butter (melted & cooled) 3/4 cup
  • Orange peel (washed, dried & chopped) 3 tbsp
  • Butter (to butter the molds) 1 tbsp
  • Individual 3-inch fluted tart molds 18 OR
  • Miniature muffin tins 18 OR
  • Miniature fluted silicone tart molds 18
Method:
  • Toast almonds in an oven at 230 degrees centigrade for 5 minutes. Let it cool and ground to make a fine powder. Combine the sugar, ground almonds, and flour, and then sift or force the mixture through a fine sieve into a second bowl. The mixture should be very fine. Stir in the unbeaten egg whites until thoroughly blended, and then stir in the 3/4 cup of melted butter until well blended. Add in the chopped orange peel. Butter the tart molds or muffin tins. Fill each mold with batter just to the rim of the mold. Place the molds on a baking sheet and place it in the center of the preheated oven. Bake for 7 minutes at 230 degrees C , then reduce oven temperature to 200ÂşC and bake another 7 minutes. Turn off the heat and let the financiers rest in the oven another 7 minutes. Remove the financiers from the oven and un-mold them as soon as they have cooled.
