Chicken Papadoris


Ingredients:
  • Pine nuts 1/4 cup
  • Butter 1/4 cup
  • Boneless chicken breast cubed ½ kg
  • Chopped onion 1
  • Chopped garlic 4 cloves
  • Soya sauce 2 tbsp
  • Coconut milk 1 can (14 oz)
  • Paprika 1 1/2 tsp
  • Ground cumin 1/4 tsp
  • Curry powder 1 tsp
  • Corn flour 2 tsp
  • Cold water 1/4 cup
Method:
  • Heat a pan over medium-high heat. Add pine nuts, and cook stirring frequently, until evenly toasted. Remove from heat, and set aside. Melt butter, stir in the chicken, and cook, until no longer pink and juices run clear. Stir onion and garlic into the pan and cook until tender. Stir in the pine nuts, soya sauce, and coconut milk. Season it with paprika, cumin, and curry powder. In a small bowl, blend the corn flour and water. Mix into the pan and stir constantly until thick gravy has formed.
