Coconut Chicken Adobo


Ingredients:
  • Chicken 1 kg
  • Vinegar 1/2 cup
  • Fish sauce or soya sauce 2 tbsp
  • Garlic 3 cloves
  • Bay leaf 1
  • Thick coconut milk 3/4 cup
  • Ground paprika 1/2 tsp
  • Crushed red chillies 1/2 tsp
  • Freshly ground black pepper 1/4 tsp
  • Oil 2 tbsp
Method:
  • Combine the chicken with the vinegar, 2 cups water, fish sauce, garlic, and bay leaf. Bring the liquid to a boil, and then reduce to a simmer. Allow the chicken to simmer, uncovered, for 25 to 30 minutes, until tender. With a slotted spoon, remove the chicken from the braising liquid and transfer to a plate. Turn the heat up and reduce until the sauce is thick enough to coat the back of a spoon (about 10 minutes more). Stir in the coconut milk, paprika, crushed red chillies and black pepper. Heat oil, add the chicken pieces, sear until golden brown and crispy. Return the chicken to the sauce to turn so they are coated all around. Serve hot with boiled rice on the side.
