Lava Cake
Ingredients:
- Butter as needed
- Egg yolks 2
- Eggs 2
- Caster sugar 3 tbsp
- Chopped dark chocolate 3-1/2 ounces
- Butter 5 tbsp
- Cocoa powder 4 tsp
- Flour 3 tbsp
- Salt 1 pinch
- Vanilla essence 1/4 tsp
- Icing sugar (to dust) 2 tbsp
- Whisk together egg yolks, eggs, and sugar in a bowl until light. Melt chocolate and butter in a double boiler or micro. Stir melted chocolate mixture into egg and sugar mixture until combined. Sift cocoa powder, flour, and salt into the mixture; stir to combine into a batter. Add vanilla essence. Divide batter evenly between the 4 greased ramekins; tap gently on the counter to remove any air bubbles. Refrigerate 30 minutes. Arrange the ramekins in a tin or casserole dish. Pour enough hot water into the casserole dish to reach halfway up the sides of the ramekins. Bake in the preheated oven at 220 degrees C for 15-18 minutes. Loosen the edges from the ramekin with a knife. Invert each cake onto a plate and dust with powdered sugar. Serve immediately.
