Lava Cake

Lava Cake 


Ingredients:
  • Butter as needed
  • Egg yolks 2
  • Eggs 2
  • Caster sugar 3 tbsp
  • Chopped dark chocolate 3-1/2 ounces
  • Butter 5 tbsp
  • Cocoa powder 4 tsp
  • Flour 3 tbsp
  • Salt 1 pinch
  • Vanilla essence 1/4 tsp
  • Icing sugar (to dust) 2 tbsp
Method:
  • Whisk together egg yolks, eggs, and sugar in a bowl until light. Melt chocolate and butter in a double boiler or micro. Stir melted chocolate mixture into egg and sugar mixture until combined. Sift cocoa powder, flour, and salt into the mixture; stir to combine into a batter. Add vanilla essence. Divide batter evenly between the 4 greased ramekins; tap gently on the counter to remove any air bubbles. Refrigerate 30 minutes. Arrange the ramekins in a tin or casserole dish. Pour enough hot water into the casserole dish to reach halfway up the sides of the ramekins. Bake in the preheated oven at 220 degrees C for 15-18 minutes. Loosen the edges from the ramekin with a knife. Invert each cake onto a plate and dust with powdered sugar. Serve immediately.
