Chocolate Chiffon Pie
Ingredients:
- Rich tea biscuits 175 gm/6 oz
- Unsalted butter (melted) 120 gm/4 oz
- Plain chocolate (broken in pieces) 60 gm/2 oz
- Cream cheese (softened) 400 gm/14 oz
- Sweetened condensed milk 1 can
Method:
- Pre-heat oven to 190°C/375°F/Gas Mark 5. Place biscuits in food processor and blend till fine crumbs form. Melt butter and add it to the biscuit crumbs. In a 8-9 inch pie dish, add the crumbs and press mixture on the bottom and side of the dish. Bake crust for 7-8 minutes. Cool on wire rack. Place chocolate in a bowl over a pan of gently simmering water, stirring often until melted. Beat cream cheese, sweetened condensed milk with an electric mixer until blended. Slowly pour in melted chocolate. Beat until smooth. Pour chocolate mixture into the cooled biscuit crust and refrigerate overnight.
