Tomato Tarts
 

Ingredients

  • Puff Pastry defrosted 1 packet
  • Feta Cheese 1 carton
  • Milk ¼ cup
  • Dried Oregano ½ tsp
  • Dried Basil 1 tsp
  • Egg beaten 1
  • Fresh Tomatoes sliced as required
Method:

  • Preheat oven to 200 degrees Centigrade (400 Fahrenheit).Take the feta cheese out of the carton, add the ¼ cup milk, and mash it a little with a fork until it is smooth. Add the dried herbs. Lightly dust your work surface with flour and then roll out the puff pastry until it is about half a centimeter thick. Use a square cookie cutter and cut as many squares as will fit, or as many as you need.Brush the surface of the puff pastry squares with the beaten egg.Place one teaspoon of the feta cheese mix in the middle of the puff pastry square, top it with a round of sliced tomato. Sprinkle some dried basil on top.Place the tarts on a non-stick baking tray, and bake for 20-25 minutes or until the pastry is golden and puffy.
