Garlic Mash


Ingredients:
  • Whole pod garlic 1
  • Extra-virgin olive oil 2 tbsp
  • Potatoes 3-4 large
  • Salt 1 tbsp
  • Milk 1 cup
  • Lemon juice 3 tbsp
  • Crushed black pepper
Method:
  • Halve the garlic pod n place on a piece of foil, drizzle olive oil and wrap into a package. Roast until the garlic feels very soft, 20 to 40 minutes, depending on size. Let cool. Boil potatoes and salt with water in a pan. Cook until potatoes are very tender. Drain well and mash. Squeeze the garlic cloves into the potatoes. Add milk lemon and pepper and stir to combine.
