Coconut Pancakes


Ingredients:
  • Coconut milk 2-1/2 cups
  • Rice flour 3/4 cup
  • Eggs 3
  • Sugar 1/2 cup
  • Scraped coconut 1 cup
  • Oil 2 tbsp
Method:
  • Place coconut milk, rice flour and eggs in a bowl. Blend well Add sugar and blend again till the sugar dissolves. Add 1 cup coconut and mix well. Heat oil. Pour a ladleful of batter on it and cook till the underside is covered with brown flecks. Turnover and cook the other side similarly. Make more pancakes. Keep them warm.
