Macaroni Salad


Ingredients:
  • Cooked elbow macaroni 4 cups
  • Mayonnaise 1 cup
  • White vinegar 1/4 cup
  • Caster sugar 2/3 cup
  • Mustard paste 2-1/2 tbsp
  • Salt 1-1/2 tsp
  • Ground black pepper 1/2 tsp
  • Onion (chopped) 1 (large)
  • Green capsicum (seeded and chopped) 1
  • Grated carrot 1/4 cup
  • Sliced olives 1/4 cup
Method:
  • Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain. In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, capsicum, carrot, olives and macaroni. Refrigerate for at least 4 hours before serving, preferably overnight.
