Chicken and Sausage Soup
Ingredients:
- Butter 1/4 cup
- Flour 1/4 cup
- Cream 2-1/2 cups
- Milk 2-1/2 cups
- Chicken stock cubes 2
- Cream cheese (softened) 8 oz
- Cooked, chopped chicken 2-1/2 cups
- Chopped sausage 1/2 cup
- Grated cheese 2 cups
Method:
- Melt butter and then add the flour to make a roux. Cook for about a minute. Add the milk and the chicken stock cube dissolved in hot water. Heat for a few minutes and then add the cream cheese. While continuously stirring, bring to a boil and add chicken and sausages. Take off heat and stir in cheese. Serve immediately.
