Apple Walnut Cake


Ingredients For the Walnut Topping:
  • Finely chopped walnuts 1 cup
  • Light brown sugar (packed) 1/2 cup
  • Cinnamon powder 1-1/4 tsp
  • Flour 1 tbsp
  • Butter (slightly softened) 2 tbsp
For the Apple Cake:
  • Flour 2 cups
  • Baking soda 1 tsp
  • Baking powder 1 tsp
  • Salt 1/2 tsp
  • Butter (softened) 1/2 cup
  • Sugar 1 cup
  • Eggs 2
  • Vanilla essence 1 tsp
  • Lemon zest 1/2 tsp
  • Cream 1 cup
  • Lemon juice of 1 lemon
  • Apples (diced) 2 to 2-1/2 cups
Method:
  • To make the walnut topping, in a bowl, combine walnuts, brown sugar, cinnamon, and flour. Add the butter and crumble between your fingertips until the mixture forms coarse crumbs. Refrigerate mixture while preparing the cake batter. To make the apple cake, prepare sour cream by mixing lemon juice in the cream and let stand 10 minutes. Sift together the flour, baking soda, baking powder, and salt. Beat butter and sugar until the mixture becomes light. Beat the eggs one at a time, beating well after each addition. Add the vanilla essence and lemon zest. Beat in flour mixture alternately with the sour cream. Fold in apples using a spatula just until evenly distributed in the batter. Pour into a greased and floured 10-inch spring form tin. Sprinkle the top evenly with the prepared walnut mixture. Bake at 180 degrees C for approximately 40 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean.
