Chicken Teriyaki Stir Fry


Ingredients:
  • Oil 2 tbsp
  • Grated ginger 1 tbsp
  • Minced garlic 2 cloves
  • Boneless chicken breast fillets (cubed) 1/2 kg
  • Spring onions (sliced) 2
  • Dried shiitake mushrooms 1 cup
  • Soya sauce 3/4 cup
  • Brown sugar 1/4 cup
  • Tofu (cubed) 1 cup
  • Corn flour 1 tsp
  • Ground black pepper to taste
Method:
  • Heat oil in a pan. SautĂ© ginger and garlic until fragrant. Add chicken and sautĂ© until cooked, about 5 minutes. Add mushrooms, soya sauce and sugar, mix well to combine. Add tofu and spring onions and sautĂ© for a minute. Add corn flour earlier dissolved in water to thicken sauce; simmer for a few minutes. Season with ground black pepper.
