Chowder Soup


Ingredients:
  • Prawns (boiled and chopped) 4
  • Chicken (boiled and shredded) 1/2 cup
  • Mushrooms (sliced) 2 tbsp
  • Egg yolk 1
  • Cream 1/4 cup
  • Grated cheddar cheese 1 tbsp
  • Ketchup 3 tbsp
  • Butter 2 tbsp
  • Flour 4 tbsp
  • Salt 1 tsp
  • White pepper 1/2 tsp
  • Chicken stock 6 cups
Method:
  • Heat butter in a pan, add in flour, stir for 1 minute, remove and add stock with salt and white pepper and cook. When it starts to thicken, add ketchup, chicken, prawns, mushrooms and cheese. Just before serving mix in egg yolk and cream, slightly cook for 2 minutes, serve garnished with finely chopped parsley.
