New Orleans Rice
Ingredients
- Rice, soaked 1 cup
- Oil 2 tbsp
- Garlic, finely chopped 1 tbsp
- Celery, finely chopped 1 stalk
- Onions, chopped 2 medium
- Red capsicum 1
- Green capsicum 1
- Red kidney beans boiled ¼ cup
- Green peas, boiled 2 tbsp
- Corn 2 tbsp
- Chicken sausages, sliced 2 – 3
- Salt to taste
- Paprika ¼ tsp
- Crushed black peppercorns 1 tsp
- Dried thyme ½ tsp
Method
- Heat oil. Add garlic, celery and onions and sauté. Blend red and green capsicums. Add to the pan, mix well and sauté for 2 minutes. Add kidney beans, peas and corn kernels. Add sausages and water, salt, paprika, crushed peppercorns, thyme and rice. Mix and cook till almost done. Cover and simmer till completely done.
