Marzipan


Ingredients
  • Almonds (blanched & ground) 8 oz
  • very fine caster sugar, sieved 8 oz
  • Icing sugar, sifted 8 oz
  • Eggs 1 – 2
  • Almond essence 1 tsp
Method
  • In a bowl, mix 8 oz icing sugar, 8 oz very fine caster sugar, 8 oz blanched and ground almonds, 1 tsp almond essence and gradually add in 1-2 eggs. Knead to form a stiff paste. Wrap in cling and store in fridge.
