Mulligatawny Soup
Ingredients
- Onion chopped 1/2 cup
- Celery, chopped 2 stalks
- Carrot, diced 1
- Butter 1/4 cup
- Flour 1 ½ tbsp
- Curry powder 1 ½ tsp
- Chicken broth 4 cups
- Apple, cored and chopped half
- Rice 1/4 cup
- Chicken breast (chopped) 1
- Salt to taste
- Ground black pepper to taste
- Dried thyme 1 pinch
- Cream, heated 1/2 cup
Method
- Sauté onions, celery, carrot, and butter in a large pot. Add flour and curry powder, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.When serving, add hot cream.
