Mulligatawny Soup


Ingredients
  • Onion chopped 1/2 cup
  • Celery, chopped 2 stalks
  • Carrot, diced 1
  • Butter 1/4 cup
  • Flour 1 ½ tbsp
  • Curry powder 1 ½ tsp
  • Chicken broth 4 cups
  • Apple, cored and chopped half
  • Rice 1/4 cup
  • Chicken breast (chopped) 1
  • Salt to taste
  • Ground black pepper to taste
  • Dried thyme 1 pinch
  • Cream, heated 1/2 cup
Method
  • Sauté onions, celery, carrot, and butter in a large pot. Add flour and curry powder, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.When serving, add hot cream.
