Liver Pate


Ingredients
  • Chicken liver 1 kg
  • Red chili powder 1 tsp
  • Turmeric ¼ tsp
  • Garlic, chopped 5 cloves
  • Milk 2 tbsp
  • Cream 1 packet
  • HP Sauce 5 tbsp
  • Black pepper, crushed 1 tbsp
  • Salt 1 tsp
  • Oil 1 tbsp
  • Butter 2 tbsp
Method
  • Marinate liver with red chili powder, turmeric, garlic, HP sauce, black pepper, salt. Let it marinate overnight or for a few hours. Heat oil and butter and sauté the liver in it, without its marination liquid, gradually add the liquid too and cook till liver is done, cool and then puree with milk and cream. Serve chilled with Melba toasts.
