Fish Nicoise


Ingredients
  • Onion, sliced 1
  • Garlic crushed 1 clove
  • Olive oil 2 tbsp
  • Capsicum, sliced 1
  • French beans a few
  • Tomatoes, chopped 2 – 3
  • Black olives, chopped 6 – 8
  • Sugar 1 tsp
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Fish fillets ½ kg
  • Oregano 1 tsp
Method
  • Put a steamer with water to boil. Heat the olive oil and sauté onion and garlic, add tomatoes, beans and capsicums, olives, sugar, salt and pepper, simmer and transfer to a foil piece on a steamer and place fish fillets on it and steam for 5-10 minutes, sprinkle oregano and serve in the foil.
