Fish Nicoise
Ingredients
- Onion, sliced 1
- Garlic crushed 1 clove
- Olive oil 2 tbsp
- Capsicum, sliced 1
- French beans a few
- Tomatoes, chopped 2 – 3
- Black olives, chopped 6 – 8
- Sugar 1 tsp
- Salt 1 tsp
- Black pepper 1 tsp
- Fish fillets ½ kg
- Oregano 1 tsp
Method
- Put a steamer with water to boil. Heat the olive oil and sauté onion and garlic, add tomatoes, beans and capsicums, olives, sugar, salt and pepper, simmer and transfer to a foil piece on a steamer and place fish fillets on it and steam for 5-10 minutes, sprinkle oregano and serve in the foil.
