Home-made Mincemeat
Ingredients
- Apples, peeled and grated 4 – 5 large
- Apple juice 1 ½ cup
- Dark raisins 3/4 cup
- Golden raisins 3/4 cup
- Currants 3/4 cup
- Cranberries 3/4 cup
- Mixed candied peel 3/4 cups
- Dark brown sugar ½ cup
- Unsalted butter 60 gm
- Cinnamon ground ½ tsp
- Allspice ground ½ tsp
- Nutmeg ground ½ tsp
- Cloves ground ½ tsp
- Salt ¼ tsp
Method
- Place all the ingredients in a large pan, and bring to a boil over medium heat, stirring often. Then, reduce the heat to medium-low and simmer the mincemeat, stirring often, for about 25-30 minutes, or until the liquid is almost evaporated. Transfer the mincemeat to a large bowl and let it cool completely. Cover with plastic wrap and place in the refrigerator, at least overnight, or up to a month.
