Home-made Mincemeat


Ingredients
  • Apples, peeled and grated 4 – 5 large
  • Apple juice 1 ½ cup
  • Dark raisins 3/4 cup
  • Golden raisins 3/4 cup
  • Currants 3/4 cup
  • Cranberries 3/4 cup
  • Mixed candied peel 3/4 cups
  • Dark brown sugar ½ cup
  • Unsalted butter 60 gm
  • Cinnamon ground ½ tsp
  • Allspice ground ½ tsp
  • Nutmeg ground ½ tsp
  • Cloves ground ½ tsp
  • Salt ¼ tsp
Method
  • Place all the ingredients in a large pan, and bring to a boil over medium heat, stirring often. Then, reduce the heat to medium-low and simmer the mincemeat, stirring often, for about 25-30 minutes, or until the liquid is almost evaporated. Transfer the mincemeat to a large bowl and let it cool completely. Cover with plastic wrap and place in the refrigerator, at least overnight, or up to a month.
