Ingredients:
  • Butter 250g
  • Caster Sugar 250g
  • Medium Eggs 1-2
  • Vanilla Essence 1tsp
  • All Purpose Flour 500g
  • All Purpose Flour Extra for Dusting
Directions:
  •  In a bowl of an electric mixer, beat the butter and sugar together until creamy and quite fluffy.Add the eggs and vanilla extract and mix until they are well combined.Sift the flour. Add to the bowl and mix until all the ingredients are just come together you – do not over mix.Put the dough into a container or cover with a Clingfilm and leave it in the refrigerator for at least 30 minutes.On a work surface lightly dusted with floor, roll out the cookie dough to about 4mm (1/8 inch) thick. Sprinkle a little extra flour on the top of the dough as you roll to prevent it from sticking to the rolling pin.Cut out your desired shapes. Place on baking trays lined with wax paper and return to the refrigerator to rest for at least 10-15minsBake cookies in a preheated oven at 180°C/350°F for about 10 minutes, depending on their size or until they are golden brown.Cool them before decorating.
