Carrot Cake
Ingredients
- Flour 2 cups
- Caster sugar 2 cups
- Carrots, shredded 3 cups
- Baking powder 1 tsp
- Baking soda 1 tsp
- Ground cinnamon 1 tsp
- Oil 1 cup
- Eggs 4
Ingredients for Frosting
- Cream cheese 200 gm
- Icing sugar 4 oz
- Vanilla essence ½ tsp
- Marzipan carrots to decorate
Method
- Beat eggs, add oil, caster sugar, add the sifted flour, baking soda, baking powder and cinnamon, fold in the carrots, mix all well and put to bake in a greased and lined 9” tin. Bake at 180 degrees C for 30-40 minutes or until a skewer inserted in center comes out clean. Cool on a wire rack completely before frosting. For the frosting, beat cream cheese, add icing sugar and essence and apply on the cake, decorate with carrots made of marzipan.
