Carrot Cake


Ingredients
  • Flour 2 cups
  • Caster sugar 2 cups
  • Carrots, shredded 3 cups
  • Baking powder 1 tsp
  • Baking soda 1 tsp
  • Ground cinnamon 1 tsp
  • Oil 1 cup
  • Eggs 4
Ingredients for Frosting
  • Cream cheese 200 gm
  • Icing sugar 4 oz
  • Vanilla essence ½ tsp
  • Marzipan carrots to decorate
Method
  • Beat eggs, add oil, caster sugar, add the sifted flour, baking soda, baking powder and cinnamon, fold in the carrots, mix all well and put to bake in a greased and lined 9” tin. Bake at 180 degrees C for 30-40 minutes or until a skewer inserted in center comes out clean. Cool on a wire rack completely before frosting. For the frosting, beat cream cheese, add icing sugar and essence and apply on the cake, decorate with carrots made of marzipan.
