Royal Icing

Ingredients

• Egg whites 2
• Icing sugar, sifted 2 oz
• Lemon juice 2 tbsp

Method

• Beat 2 egg whites till foamy and add 1 oz of the icing sugar and 1 tbsp lemon juice. Beat till white and smooth.Add remaining 1 oz of the icing sugar and 1 tbsp lemon juice and mix again. Cover with a damp cloth to prevent from drying out or store in an airtight bowl till needed.
