Chicken in Rice Ring
Ingredients:
- Steamed rice 2 cups
- Green peas (blanched) 1/2 cup
- Oil 4 tbsp
- Cumin seeds 1/2 tsp
- Salt to taste
- Boneless chicken cubes 1 kg
- Grated onions 3 medium
- Ginger paste 1/2 tbsp
- Garlic paste 1/2 tbsp
- Turmeric powder 1/2 tsp
- Coriander powder 1 tbsp
- Cumin powder 1 tsp
- Red chilli powder 1 tsp
- Pureed tomatoes 3 medium
- Garam masala powder 1/2 tsp
- Chopped coriander leaves 1 tbsp
Method:
- Heat one tablespoon oil add the cumin seeds. When they change colour add the green peas, rice and salt. Toss and cook for two minutes. Heat the remaining oil in another pan. Add the onions and sauté till golden brown. Add the ginger and garlic pastes and continue to sauté. Add the turmeric, coriander, cumin and red chilli powders. Add the pureed tomatoes and cook till the oil separates from the masala. Add the chicken pieces and salt. Sauté on high heat for five minutes. Add one and a half cups of water, bring to a boil, cover and cook till the chicken is fully done. Sprinkle the garam masala powder and mix. Pack the pea pulao into a ring mould and unmould it on a plate, pour some of the prepared chicken gravy in between it. Garnish with the fresh coriander and serve hot.
