Chicken Chilli Tacos


Ingredients:
  • Chicken breast piece 1
  • Onion chopped 1
  • Bell pepper chopped 1
  • Butter 2 tbsp
  • Cayenne powder 1/4 tsp
  • Salt 1 tsp
  • Sugar 1 tsp
  • Ground black pepper 1/2 tsp
  • Red chilli powder 2 tbsp
  • Dried oregano 1/2 tsp
  • Cumin powder 1/2 tsp
  • Tomato paste 1 can
  • Tomato ketchup 1/2 cup
  • Tortilla Bread half cooked (not crisp)
  • Cabbage and Jalapenos (cut in strips)
Method:
  • Heat 2 tbsp oil or butter, sautĂ© chopped onion and chopped bell pepper and set aside. Add chicken in a large saucepan and cook for 3-5 minutes or until golden brown without adding oil. Add sautĂ©ed onion, bell pepper, tomato paste, tomato ketchup. Season with salt, sugar, black pepper, red chilli powder then add dried oregano, cumin powder and cayenne powder. Let it cook on low heat and simmer for 20-25 minutes. Take half-cooked tortilla bread, place on the taco shells and bake for 1-1.5 minutes or until crisp. Pour some chilli chicken on it after removing from the oven. Sprinkle chopped cabbage, jalapenos and serve with a dollop of sour cream.
