Mexican Chowder


Ingredients:
  • Chicken breast (cut into bite-size pieces) 1
  • Chopped onion 1/2 cup
  • Minced garlic 1 clove
  • Butter 3 tbsp
  • Chicken stock 2 cubes
  • Hot water 1 cup
  • Ground cumin 3/4 tsp
  • Cream 2 cups
  • Shredded cheese 2 cups
  • Cream-style corn 1 can
  • Chopped jalapenos 2 tbsp
  • Hot pepper sauce 1 dash
  • Chopped tomato 1
  • Coriander to garnish
Method:
  • Brown chicken, onion, and garlic in butter until chicken is no longer pink. Dissolve the stock cubes in hot water, pour into pan and season with cumin. Bring to a boil. Reduce heat to low, cover, and simmer for 5 minutes. Stir in cream, cheese, cream style corn, jalapenos and hot sauce and serve.
