Mexican Chowder
Mexican Chowder
Ingredients:
- Chicken breast (cut into bite-size pieces) 1
- Chopped onion 1/2 cup
- Minced garlic 1 clove
- Butter 3 tbsp
- Chicken stock 2 cubes
- Hot water 1 cup
- Ground cumin 3/4 tsp
- Cream 2 cups
- Shredded cheese 2 cups
- Cream-style corn 1 can
- Chopped jalapenos 2 tbsp
- Hot pepper sauce 1 dash
- Chopped tomato 1
- Coriander to garnish
Method:
- Brown chicken, onion, and garlic in butter until chicken is no longer pink. Dissolve the stock cubes in hot water, pour into pan and season with cumin. Bring to a boil. Reduce heat to low, cover, and simmer for 5 minutes. Stir in cream, cheese, cream style corn, jalapenos and hot sauce and serve.
