Chicken Vegetable Soup


Ingredients:
  • Chicken with bones 1/2 kg
  • Chopped garlic 8-10 cloves
  • Chopped ginger 1-inch piece
  • Mint leaves few sprigs
  • Coriander leaves 1 bunch
  • Onion (diced) 1
  • Tomatoes (cut in large pieces) 2
  • Turmeric powder 1 tsp
  • Chili powder 1/2 tsp
  • Garam masala powder 1/4 tsp
  • Black pepper powder 1 tsp
  • Lemon juice of 1 lemon
  • Sugar 1 tsp
  • Salt to taste
  • Mixed vegetables (chopped) as required
  • Coconut milk 1 cup
  • Corn flour to thicken (optional) 1 tbsp
Method:
  • Put all ingredients except vegetables & coconut milk in a pressure cooker with 6 cups of water. Bring to pressure, lower heat to medium & cook for 10 minutes. Once the pressure comes down, open the cooker & remove the chicken pieces. Strain the soup. Add the vegetables and coconut milk to the soup & boil till veggies are cooked. Debone the chicken pieces, cut it into little pieces & add it to the soup. Add more lemon juice or salt if needed. If you want to thicken it, you could add corn flour, mixed in a little cold water, to the soup & give it a boil. Garnish with coriander leaves and serve.
