Chocolate Tart


Ingredients For the Base:
  • Ginger biscuit crumbs 1-1/2 cups
  • Butter (melted) 6 tbsp

  • Caster sugar 3 tbsp
For the Filling:
  • Cream 1-3/4 cups
  • Chocolate (chopped) 15 oz
  • Vanilla essence 1 tsp

Garnish:
  • Whipped cream as required
  • Any seasonal fruit as required
Method:
  • Stir together biscuit crumbs, caster sugar and melted butter. Firmly press on bottom and up sides of a 9-inch tart pan. Bake 8 to 9 minutes or until fragrant. Cool on a wire rack 30 minutes. 
  • To make the filling, warm cream in a saucepan over medium heat. Process chocolate in a food processor or blender until finely ground. With processor running, pour hot cream and vanilla essence through food chute in a slow, steady stream, processing until smooth, stopping to scrape down sides as needed. Pour mixture onto cooled crust. Chill, uncovered, 3 hours. Garnish with cream and any seasonal fruit and serve.
