4-Spice Grilled Chicken
Ingredients:
- Fennel seeds 1-1/2 tsp
- Paprika powder 1-1/2 tsp
- Star anise 1
- Cinnamon stick 1
- Olive oil 2 tbsp
- Chicken breast with wing (flattened slightly) 1
- Salt 1 tsp
Method:
- Dry roast the spices. Grind to a powder. Add the spice mixture and oil to the chicken and let marinate very well in refrigerator, for at least 3-4 hrs. Bring it out, add salt and mix again (if we mix salt before, it may leave moisture, drying up the chicken breast). Heat up a grilling pan and brush with oil. When it starts heating up, add the chicken to it. Grill on each sides for 6-7 minutes. Serve hot.
