Dum Chicken


Ingredients:
  • Chicken (cut into 8 pieces) ½ kg
  • Yogurt 1/2 cup
  • Kashmiri red chilli powder 1 tsp
  • Turmeric powder 1/4 tsp
  • Cumin powder 1/2 tsp
  • Ginger-garlic paste 2 tbsp
  • Salt to taste
  • Oil 2-3 tbsp
  • Cloves 4-5
  • Cinnamon 2-inch stick
  • Bay leaves 2
  • Finely chopped ginger 2-inch piece
  • Finely chopped onions 3
  • Green cardamom powder 1/4 tsp
  • Black cardamom powder 1/4 tsp
Method:
  • Mix together chicken, yogurt, Kashmiri red chilli powder, turmeric powder, cumin powder, ginger-garlic paste and salt in a bowl and set aside to marinate for ½ hour. Heat oil add cloves, cinnamon, bay leaves and sauté till fragrant. Add ginger, onions, and sauté lightly for 2-3 minutes. Add marinated chicken and mix well. Cover and cook on low heat for 10-15 minutes. Add green cardamom powder, black cardamom powder and mix well. Cover and cook for 20-25 minutes. Transfer into a serving bowl and serve hot.
