Cheesy Potato Bites
Ingredients:
- Boiled and mashed potatoes 2 cups
- Flour 2 tbsp
- Shredded cheddar cheese 2/3 cup
- Chopped sausage 1
- Chopped spring onions 1/4 cup
- Egg 1
- Bread crumbs 1-½ cups
- Oil for frying
- Salt to taste
- Pepper to taste
- Ranch or honey mustard for dipping
- Add potatoes and flour to a large bowl and stir to combine well, and then add cheese, sausage, and spring onions. Take about a heaping tablespoon of mixture and roll with hands into a small ball. It if does not hold its shape, add a little more flour to make the potatoes sturdy. Whisk egg into a small bowl and season with salt and pepper. Place bread crumbs in another bowl. Dip each ball in egg and then roll in breadcrumbs until fully coated. Heat oil, add potato balls and fry for 1-2 minutes Remove with slotted spoon and place on paper lined plate to allow excess oil to drain off. Serve with dipping sauce.
