Rice & Date Pudding
Ingredients
- Rice 1 cup
- Dried dates, chopped ¼ cup
- Milk 2 cup
- Cinnamon 1 inch stick
- Lemon rind, grated ¼ tsp
- Sugar 1 ½ tbsp
- Rose water 1 tsp
Method
- Heat rice with milk in a non stick pan on low heat till it comes to boil.Add cinnamon and stir. Cook till it thickens and rice is done. Heat another non stick pan, add dates and ½ cup water, mix well and cook. Add lemon rind and mix well. Cook till soft and dry.Discard cinnamon from rice mixture and add sugar. Mix well and cook for 2-3 minutes. Mash dates lightly. Take off rice-milk mixture from heat and add rose water. Mix well. Put rice-milk mixture into individual bowls. Place 2 tbsp of cooked dates on top. Serve warm or chilled.
