Strawberry Cake


Ingredients:
  • Caster sugar 2 cups
  • Strawberry jelly 1 packet
  • Butter (softened) 1 cup
  • Eggs 4
  • Flour (sifted) 2-3/4 cups
  • Corn flour 1 tbsp
  • Baking powder 2-1/2 tsp
  • Milk 1 cup
  • Vanilla essence 1 tbsp
  • Strawberry puree 1/2 cup
Method:
  • Beat butter, sugar and dry strawberry jelly crystals until light and fluffy. Beat in eggs one at a time, mixing well after each. Combine the flour, corn flour and baking powder; stir into the batter alternately with the milk. Blend in vanilla essence and strawberry puree (made from frozen sweetened strawberries). Divide the batter evenly between the greased and floured 9” round pans. Bake at 175 degrees C for 25 to 30 minutes in the preheated oven, or until a skewer inserted into the center of the cake comes out clean. Allow cakes to cool in their pans over a wire rack for at least 10 minutes, before tapping out to cool completely.
