Prawn Patties
Ingredients:
- Puff pastry 1 kg
- Prawns 500 gm
- Finely chopped onions 4
- Finely chopped tomato 1
- Green chillies 4-5
- Ginger garlic paste 1-1/2 tsp
- Turmeric powder 1 tsp
- Chilli powder 2 tsp
- Coriander powder 1 tsp
- Cumin powder 1 tsp
- Garam masala powder 1 tsp
- Salt 1 tsp
- Brown vinegar 1-2 tbsp
- Tomato ketchup 5-6 tbsp
- Flour 2-3 tbsp
- Finely chopped coriander 1/4 cup
- Oil for sautéing
- Eggs (for brushing) 1-2
- Prepare 2 baking trays lined with baking paper. Preheat oven to 200 degrees C. First wash, devein & pat dry the prawns on paper towel, and set aside for 5 minutes. Then add turmeric & chilli powders to the prawns & let sit for further 5 minutes. In a pan, pour little oil enough to fry the prawns till half cooked. Then remove & set aside. Pour rest of the oil & fry the onions till translucent, do not brown. Add the ginger/garlic paste & stir fry on high flame for few minutes. Turn flame low, add tomato, green chilli, vinegar & rest of dry masalas, stir & mix together & cover for 5 minutes. Now add the tomato ketchup & mix through. Add prawns and the flour & cook on low flame till well mixed. Add the fresh coriander. Cut puff pastry into squares, brush with egg. Spoon out medium balls out of prawn mixture and place on pastry, fold to form a triangle. Crimp with a fork to seal. Brush top with egg wash & bake at 200 degrees C for about 25 minutes, turning the tray once for even baking.
