Chinese Orange Chicken
Ingredients For Marination:
- Boneless Chicken 250 grams
- Chicken Stock 1 cup
- Orange Juice 1/4 cup
- Caster Sugar 1/4 cup
- White Vinegar 1/3 cup
- Soya Sauce 1/3 cup
- Garlic Cloves 2
- Orange Zest 1 tbsp
- Thai Sriracha Hot Sauce 1 tsp
- Ground Ginger 1/3 tsp
- White Pepper 1/3 tsp
Other ingredients :
- Corn Flour 1/2 cup
- Corn Flour 1 tbsp
- Cold Water 2 tbsp
- Lightly Beaten 1 egg
- Oil 1/2 cup
- Sesame Seeds 1 tbsp
- Spring Onion Sliced 1
Method :
- Thoroughly mix the marinade ingredients and put chicken pieces into a large bowl. Add 1/2 cup marinade and reserve the rest. Toss chicken and refrigerate for an hour, tossing after 30 minutes. Remove chicken pieces from the marinade and discard it, dip the chicken pieces into the beaten eggs, dredge through the cornflour. Gently press them to make sure they are properly coated. Place the chicken in the fridge for 1 hour to set the coating. After 1 hour remove the chicken from the fridge, heat the remaining marinade over medium heat to a boil, stirring occasionally. Combine water, 1 Tbsp cornflour and while stirring slowly, add enough to reach the desired consistency. Heat oil, fry chicken pieces in batches until it's cooked. When all pieces are fried and thoroughly drained, toss them into the pan with the heated marinade. Sprinkle sesame seeds. Serve immediately with fried rice and spring onions sliced.
