Coconut Cake
 

Ingredients for cake :
  • Eggs 5
  • Caster Sugar 1 cup
  • Vanilla Essence 1 tsp
  • Cocoa Powder 1/2 cup
  • Oil or Melted Butter 1/2 cup
  • Flour 1 1/2 cup
  • Baking Powder 2 tsp
Ingredients for Filling:
  • Egg Whites 2
  • Desiccated Coconut 1 cup
  • Icing Sugar 1/2 cup
Ingredients for Ganache:
  • Chocolate 4 oz
  • Cream 4 oz
  • To Decorate
  • Flaked Coconut
  • Or Coconut Chocolates
Method : 

  • For the cake beat eggs and caster sugar till creamy. Add vanilla essence and oil or melted butter and beat. In a separate bowl sieve flour, baking powder n cocoa powder. Fold dry ingredients in egg mixture. For the Filling: Beat egg whites till stiff peaks form, add in sifted icing sugar and beat, add coconut and fold. To assemble: Pour half of cake mixture in the pan and level it, pour filling and level. Pour the remaining cake mixture and level. Bake in a preheated oven at 180 C for 30 minutes or till done remove from oven let it cool completely in the tin before turning it out. To make the ganache, gently warm the cream and add the chopped chocolate. Stir till it melts and let set at room temperature. Once the cake is cold, top with ganache, decorate with coconut chocolates or flaked coconut and serve.
