Eid Meatloaf
Ingredients:
- Mutton or beef mince (very fine) ½ kg
- Fine breadcrumbs ¾ cup
- BBQ sauce 2 tbsp
- Chopped onion 1
- Crushed garlic 2 cloves
- Chopped celery (stalk and leaves) ½ cup
- Worcestershire sauce 1 tbsp
- Crushed black pepper 1 tsp
- Mustard paste ½ tbsp
- Egg 1
- Brown sugar 1 tsp
- Olive oil 2 tbsp
- Salt to taste
- Hard-boiled egg (sliced) 1 for garnish
Method:
- Heat oil, sauté the onions and garlic. Add the celery, pepper, salt and sugar. Cook on high heat for a minute. Put in a bowl and let cool. Add to the mutton or beef mince the cooked and cooled celery-onion mixture, the beaten egg and breadcrumbs. Combine the BBQ sauce, Worcestershire sauce and mustard paste. Place in a greased loaf pan. Bake at 180 degrees C in a pre-heated oven for 20 minutes or till it is done. Overcooking will make it dense. Slice when cool, serve with veggies or sliced in a sandwich.
