Chicken Maharani
Ingredients:
- Chicken 1 kg
- Garlic 10-15 cloves
- Ginger 2-inch piece
- Chilli powder 4 tsp
- Garam masala 2 tsp
- Coriander powder 1-1/2 tbsp
- Cumin powder 1 tsp
- Powdered carom seeds 1 tbsp
- Dry fenugreek leaves 2 tbsp
- Corn flour 2 tbsp
- Rice flour 2 tbsp
- Lemon juice of 2 lemons
- Salt to taste
- Soya sauce 1 tbsp
- Onions (sliced) 4
- Green chillies 6
- Soya sauce 1/2 tsp
- Black pepper 1/2 tsp
- Curry leaves few
- Chopped coriander 2 tbsp
- Grind the ginger and garlic. Marinate chicken with all the above ingredients for 2-4 hours in a refrigerator. Deep fry the marinated chicken a little at a time in hot oil on a low flame and set aside. In the same oil, fry the onions and green chillies till onions turn a light brown. Add soya sauce and pepper. In another pan, fry a few curry leaves and set aside. Add the curry leaves to the fried onions, add the fried chicken, chopped coriander and mix well before serving.
