Chicken Pineapple Stir Fry


Ingredients:
  • Soya sauce 1/4 cup
  • Sugar 2 tbsp
  • Vinegar 1 tbsp
  • Ketchup 1 tbsp
  • Ginger 1/2 tsp
  • Minced garlic 1 tbsp
  • Corn flour 1 tsp
  • Chicken breast (cut into 2-inch strips) 1/2 kg
  • Oil 2 tbsp
  • Carrot 1
  • Capsicum 1
  • Peas ½ cup
  • Pineapple chunks (drained)
  • Pineapple juice 1/4 cup
  • Boiled or stir fried rice 1 cup
Method:
  • Mix soya sauce, sugar, vinegar, ketchup, ginger, minced garlic, corn flour with reserved 1/4 cup pineapple juice in small bowl. In large pan, stir-fry chicken in hot oil 5 minutes. Add vegetables, stir-fry few more minutes. Stir in pineapple and sauce, heat through. Serve over boiled or stir fried rice.
