Chicken Pineapple Stir Fry
Ingredients:
- Soya sauce 1/4 cup
- Sugar 2 tbsp
- Vinegar 1 tbsp
- Ketchup 1 tbsp
- Ginger 1/2 tsp
- Minced garlic 1 tbsp
- Corn flour 1 tsp
- Chicken breast (cut into 2-inch strips) 1/2 kg
- Oil 2 tbsp
- Carrot 1
- Capsicum 1
- Peas ½ cup
- Pineapple chunks (drained)
- Pineapple juice 1/4 cup
- Boiled or stir fried rice 1 cup
Method:
- Mix soya sauce, sugar, vinegar, ketchup, ginger, minced garlic, corn flour with reserved 1/4 cup pineapple juice in small bowl. In large pan, stir-fry chicken in hot oil 5 minutes. Add vegetables, stir-fry few more minutes. Stir in pineapple and sauce, heat through. Serve over boiled or stir fried rice.
