Coconut ki Purian


Ingredients for the filling:
  • Mixed nuts (almonds, pistachios and raisins) 1 cup
  • Poppy seeds 1 tbsp
  • Caster sugar 1 cup
  • Coconut powder ¾ cup
For the Puris:
  • Flour 2 cups
  • Sugar 1 tbsp
  • Soda bi-carb ½ tsp
  • Ghee ¼ cup
  • Water for mixing the above
Method:
  • For the filling, dry roast the coconut powder, poppy seeds, almonds and pistachios on the stove. Remove from the stove and then add sugar. 
  • To make purian, knead the flour by adding sugar, soda bi-carb, ghee in little bit of lukewarm water. The consistency of the batter should be soft. Mix a small amount of flour in rose water. This will be used for closing the puris. Make small loaves shaped puris. Include the filling and then deep fry in oil.
